Cheese Dumplings with Dill SauceEastern Europeans  consume much less meat on daily basis, than we do here in the US, therefore there are numerous meatless dishes to select from.

Soup and vegetable dishes are more popular than meat dishes as everyday meals.

Today I will share a recipe for Cheese Dumplings with Fresh Dill Sauce.

They are delicious, as well as filling, especially if you have a bowl of soup to start your meal with.

Farmers cheese is a very popular ingredient in many home cooked dumplings in Eastern Europe, as well as baked good, hence the same is true for this recipe.

Cheese Dumplings with Dill Sauce – Vegetarian Recipe

Ingredients

  • 1 lbs. Farmers Cheese (Friendship brand is my favorite)
  • 1 Tbs. butter, melted
  • 1/4 tsp. black pepper, ground
  • 1/2 cup unseasoned bread crumbs
  • 1/2 cup mashed potatoes
  • 3 eggs, separated
  • 2 Tbs. corn starch
  • Dill Sauce
  • 1 1/2 cups of Vegetable Broth
  • 1/2 onion chopped fine
  • 1 garlic clove, minced
  • 1 Tbs. butter
  • 1/3 cup half and half
  • 1/4 tsp black pepper, ground
  • 2 Tbs. fresh Dill Weed, chopped
  • 1 Tbs. flour (Wondra is my favorite, since it blend well without lumps)
  • 1 bay leaf
  • 2 peppercorns of allspice

Instructions

  1. Place cheese in a medium mixer bowl, add melted butter and mix until creamy.
  2. Add one egg yolk at a time, mixing continuously.
  3. Mix in mashed potatoes, bread crumbs, and pepper.
  4. Set aside.
  5. In another medium bowl, whip the egg whites to stiff peaks.
  6. Fold into the cheese mixture.
  7. Set aside.
  8. Fill a large pot, halfway full, with cold water, add some salt, and bring to boil.
  9. While the water is cooking, make round walnut size dumplings, and set aside on a floured surface.
  10. Drop half of them into the boiling water, stir gently with a wooden spoon, bring it back to boil.
  11. Cook for 1-2 minutes.
  12. Remove with a slotted spoon into a bowl of cold water, then drain it over a colander. Place on a platter.
  13. Repeat same process with the second batch of dumplings.
  14. Dill Sauce
  15. Melt butter in a medium saucepan, add the chopped onion and garlic.
  16. Saute for a minute, until wilted.
  17. Add vegetable broth, black pepper, bay leaf, and allspice.
  18. Bring to boil and cook for a minute.
  19. Remove and discard the allspice and the bay leaf.
  20. Use a fork, or a mixer, to blend the veggies with the broth to form a smooth mixture.
  21. Add chopped dill weed, and bring to boil.
  22. In a cup, mix 1 Tbs. of flour with half and half, and add to dill sauce.
  23. Cook for one minute, or until thickened.
  24. Serve over warm dumplings.
