Wow, I feel so privileged to hear from you. I love your daughter's website, and check it out everyday. You must be so proud of her, and rightfully so. She sounds amazing, and keeping so busy, I feel like I almost know her, but only through her articles.
I am Ukrainian, but I was born in Southern Poland and came to US during my early teenage years.
Thank you for stopping by, and taking the time to leave me a comment.

Peas and carrots sound great in a pasta with sauce. I would also like to add some yellow peppers to make it even more colorful. Thanks for sharing.

Hey BusyMom, nice to hear from you again. Thanks for stopping by and sharing great ideas about making a nutritious meal out of Mac-n-Cheese. I have to try the Indian version you suggested, since I just replenished my curry supply.

One hint: If you do resort to Mac n Cheese, just drop frozen veggies to the boiling macaroni for the last few minutes of cooking. Then you don't dirty another pot to make the veggies.

I also LOVE to change the whole flavor of the mac n cheese with a variety of spices and add-ins:

Indian: curry powder, cayenne pepper, garlic, veggies
Italian: garlic, italian seasoning, diced tomatoes or sundried tomatoes
Other: peas, ham or bacon, garlic, pepper .

I just throw in leftovers if it sounds like they might work with it.

To add a little variation to pasta and sauce try adding some peas and carrots.
