European Apple Cake- Sharlotka

This European Apple Cake recipe has been shared with me by a friend of mine, and referred to as “Sharlotka”.  The cake is made out of a very rich batter (lots of egg yolks and butter), which makes it so scrumptious.

The cake resembles a shortbread cookie, and the filling consists of sautéed apple slices, flavored with sugar, lemon juice, and cinnamon.

The topping is made of some of the cake batter set aside and chilled in the freezer, then grated onto the apple filling just before baking.

Since the size of this sheet cake is 9 x 13 inches, it can be cut into 18, or more serving pieces.

European Apple Cake- Sharlotka

Ingredients

    Cake Ingredients:
  • 3 cups all-purpose flour (I use unbleached Gold Medal)
  • 1 Tbs. Baking Powder
  • Pinch of salt
  • 6 egg yolks, room temperature
  • 1 cup granulated sugar
  • 1 tsp. vanilla extract
  • 1 tsp. lemon zest
  • 1 1/4 cup butter, room temperature
  • Filling Ingredients:
  • 8 medium apples (Granny Smith, Gala, Golden Delicious, Fuji)
  • 2 Tbs. sugar (granulated white, or brown)
  • 1 tsp. vanilla extract
  • 1 Tbs. lemon juice
  • 1 Tbs. cinnamon (more if like)
  • 1 Tbs. butter

Instructions

  1. In a large mixing bowl mix butter and sugar, until incorporated.
  2. Mix in egg yolks, one a time.
  3. Add vanilla extract and lemon zest.
  4. In a small bowl mix the flour, salt and baking powder.
  5. Using a paddle attachment, gradually mix in the flour, until a soft dough forms.
  6. Remove 1/3 of the dough, and chill in the fridge to be used for topping.
  7. Line a 9 x 13 cake pan with parchment paper, and grease well bottom and sides.
  8. Spread evenly the 2/3 of the dough over greased paper and press it down evenly with your fingers.
  9. Spread cooled apple filling over the dough, and smooth it out.
  10. Using a large eye shredder, shred the chilled dough over the apples, to form a topping.
  11. Bake in a preheated oven at 350 degrees F, for 25-30 minutes, or until the topping is golden color.
  12. Remove from the oven, and cool in the pan.
  13. Apple Filling
  14. Peel, core and quarter apples. Cut each quarter into slices, cutting it across.
  15. Warm a large frying pan with butter, and saute the apples until wilted (about 10 minutes).
  16. Add the sugar, lemon juice, vanilla extract and cinnamon. Mix well to incorporate.
  17. Cool filling, before spreading it on the cake.
