Chocolate Waffles with Mango Ice CreamChocolate lovers will appreciate this Dark Chocolate Waffles recipe, since these waffles are not only great for breakfast, but also as a delicious dessert.

The original recipe was posted by Bon Appetit, but since I made few changes, I will post my version for you.

Originally I made these for breakfast, served with warm sauce made from fresh fruit, topped with whipped cream.

However, they were delicious the next day, warmed up and served with a scoop of Mango Ice Cream, drizzled with Caramel sauce.

This recipe yields 8-10 round waffles.

Dark Chocolate Waffles – Recipe

Ingredients

  • 2 cups all-purpose flour (I used Unbleached Gold Metal flour)
  • 1/2 cup unsweetened Dark Chocolate cocoa powder
  • 14 cup brown sugar
  • 2 tsp. baking powder (I use aluminum free)
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 3 large eggs, separated
  • 2 cups buttermilk
  • 1/4 cup canola oil
  • 1/4 cup butter, melted
  • 1 tsp. vanilla extract (or your favorite flavor)
  • 4 oz. semi-sweet baking chocolate, finely chopped
  • 2 oz. unsweetened baking chocolate, finely chopped

Instructions

  1. In a large bowl, combine dry ingredients: flour, cocoa powder, brown sugar, salt, baking powder and baking soda.
  2. In a medium bowl, mix buttermilk, egg yolks, oil, butter, and vanilla.
  3. Using a fork, incorporate liquids into the dry ingredients, until well combined.
  4. In a small bowl, beat egg whites with an electric mixer until soft peaks form.
  5. Using a spatula, fold egg whites into batter.
  6. Also fold in the shaved chocolate.
  7. Heat waffle iron, sprayed with cooking spray, and pour about 1/3 cup of batter onto it.
  8. Cook until done (follow manufacturer instructions).
  9. Keep waffles warm in a warm oven, while cooking remaining batches.
  10. Serve warm, or cool completely to store in the fridge, or for freezing.
