Ukrainian Christmas Eve Kutia – Gluten Free Recipe

Glutten Free Kutia + Millet grain recipeChristmas Eve has passed for some, but many of my family and friends are still looking forward to celebrate this holiday on January 6th and 7th.

I have been asked if there might be a suitable grain to prepare a gluten free Kutia dish for Christmas Eve, hence this recipe today for Millet Kutia.

Another grain which can be used, is Oat grain, which I was unable to find locally (oatmeal is not suitable for this recipe).

Millet Kutia has a similar grainy texture as Whole Wheat Kutia, with slightly sweeter taste, hence it needs less honey to flavor it with.

In the past I posted a very successful recipe for Gluten Free Varenyky (perogies).   Hopefully we can come up with other gluten free recipes for a Traditional Ukrainian Christmas Eve dinner, for those who are gluten intolerant.

This recipe yields 2 cups of Kutia.

Ukrainian Christmas Eve Kutia – Gluten Free Recipe

Ingredients

  • 1 cup of Millet grains
  • 2.5 cups of cold water
  • 2 Tbs. Honey (I used Orange Blossom flavored honey)
  • 1-2 Tbs. Poppy seeds (I used Solo Puppy Seed Filling)
  • 1/4 cup Walnuts, coarsely chopped
  • 1/4 cup golden raisins or craisins (optional)
  • 1/8 tsp. Walnut Extract (optional)

Instructions

  1. Place 1 cup of Millet grains in a small sieve, place under running water, to rinse it well.
  2. Fill a 2 quart pot with 2 cups of cold water, add Millet, cover and bring to boil.
  3. Uncover partially, and cook for 15 minutes, or until al dente, so it remains grainy rather than mushy.
  4. Remove from heat, drain off hot water.
  5. Add cold water, mix, and pour over a sieve, to fully drain.
  6. Place cooled grains in a small bowl, and flavor with honey, poppy seed, raisins, nuts and extract.
  7. Cover, and keep refrigerated until ready to use.

Notes

Millet grain does not require prior soaking as whole wheat grain does. Also, you may adjust the honey and poppy seed amounts to suit your own taste.
