Bailey’s Caramel Irish Cream Cake – Recipe
Another birthday at the office, so as usual, I offered to make a special birthday cake, but asked the birthday boy to provide me with a cake recipe of his choosing.

For the past three years I have been making her favorite Chocolate Cake with Fleur de Sel Caramel Filling, but this year I just wanted to do something different.
She selected a Dark Chocolate Cake with Dark Chocolate Ganache, so I took her up on the idea, and baked the above pictured cake.

Another cake challenge proposed to me by my daughter a while back, as a choice for her Birthday cake. I love trying out new recipes, so I was ready to tackle this one as well. You can never go wrong with chocolate.
This chocolate cake consists of 4 layers of cake, with chocolate ganache, creamy salted caramel, and toasted almonds. If this doesn’t make your mouth water, I don’t know what will!

I was looking for a recipe for an apple cake that would resemble a favorite of mine baked by someone at my church, and this one comes extremely close to the taste I recall. The cake batter is not sweet and rather flaky once baked, almost like a pie crust, but the sweetness of the apple filling pulls it all together very nicely.

This European Apple Cake recipe has been shared with me by a friend of mine, and referred to as “Sharlotka”. The cake is made out of a very rich batter (lots of egg yolks and butter), which makes it so scrumptious.
