I created this recipe based on my childhood memory of Apple Pancakes prepared by my Godmother which she called “Ratsushki”.
These pan-fried Apple Fritters (pancakes) are very easy to make, as they are made with all-purpose flour mixed with finely diced apples (or any fresh fruit), which makes them a little bit denser than the ones made out of a pancake mix, but they absorb less syrup at serving time.
Pancakes are traditionally a breakfast food, but there is nothing wrong with having them for lunch, or even dinner.
Strawberry season is here again, hence time to use these fresh berries in my recipes. My daughter also gardens, and this year her rhubarb plant is doing exceptionally well. She shared her harvest with me, so I decided to create a pancake sauce out of her
These pancakes came out really moist, and not very sweet.
Serving them with blueberry pie filling sweetened them enough, but maple syrup was also a delicious alternative.
My children love making homemade pancakes for their families and friends, from the recipe I posted for Pan Apple Fritters, but one of their friends suggested to me to use buttermilk and chocolate chips, hence this recipe today.
