My sister-in-law shared this Jello Gem Cream Roll recipe, but I slightly changed the filling instructions. She used one flavor of jello which was not fully set yet, to sweeten and add color to her whipped cream filling. I chose to use 3 different jello flavors, let each fully set, then cut them into small “gems” and gently fold them into the whipped cream to create the mosaic effect.
This hot summer weather is calling for lots of quick-to-prepare light meals, thus lots of salads and refreshing desserts.
Jello desserts are one of my favorite desserts for the summer, because they are light, and served cold.
The hot summer weather does not seem to be going away any time soon, hence it is a perfect time to enjoy this summer dessert.
Spend these hot summer days on the beach, in the mountains, or wherever your favorite place might be, but definitely not in your kitchen.
