Stuffed Peppers with Rice and Ham

Easter is just around the corner, hence there will be plenty of ham left over for creating new meals.

It’s a very simple recipe, but the outcome is refreshing and delicious.  Having ham sandwiches, ham and eggs, Chef’s salad with eggs and ham, and cubed ham with gravy over mashed potatoes, finally called for a new recipe.

Potato Balls (Knedle) – Vegetarian Recipe

One of the items my mom cooked often, and I enjoyed very much, are Knedle, or Potato Balls. These are very quick to prepare, require few basic ingredients, and are very versatile for serving plain with butter and sauteed onions, with tomato sauce, or even filled with fruit and served as a sweet dish or dessert.

Sweet Potato (Palushky) Gnocchi – Recipe

If you are looking for an idea to use up your leftover mashed potatoes, whether it is white or sweet potatoes, gnocchi, or palushky, are your best bet.

With Thanksgiving coming up, you just might want to keep this recipe in mind, as for sure you will have some leftover potatoes to turn into a new dish.

Rosettes – Savella’s Recipe

This recipe is from the Traditional Ukrainian Cookery cookbook by Savella Stechishin (pg.415) if you have her book.  This book was extremely popular in the 1970s, and now you still can find it on Amazon.com.

I love making these Rosettes for special occasions because they look so dainty, but it is a time-consuming process like with most baking projects.

Fruit Filled Crepes

One of my favorite recipes from my mom, is a recipe for crepes. She usually filled them with creamed, and sweetened, farmer’s cheese. I like my crepes filled with fresh fruits, or fruit preserves ( I use Smucker’s Sugar Free Fruit Preserves), served with fruit syrup (also by Smucker’s), and whipped cream. This dish may be served as a light main course, or as a dessert. Makes about 8 crepes.
