All those pumpkins out there from Halloween decorations can be turned into pumpkin paste and baked into a nice Pumpkin Pie, Pumpkin Roll, Pumpkin Cheesecake…etc.
If you are like me and leave that pumpkin out there until Thanksgiving, and purchase ready-made pumpkin paste for your baking, then your are ahead of the game with your baking.
Today I will share may recipe for a Pumpkin Roll which my family loves.
Even if you are not a huge fan of scones, you will LOVE this recipe.
I made a batch of healthful scones a while back using a skinny recipe. They were tasteful, but not as moist and flaky as these Cranberry Orange Scones.

My sister-in-law shared this Jello Gem Cream Roll recipe, but I slightly changed the filling instructions. She used one flavor of jello which was not fully set yet, to sweeten and add color to her whipped cream filling. I chose to use 3 different jello flavors, let each fully set, then cut them into small “gems” and gently fold them into the whipped cream to create the mosaic effect.
I love the creaminess of the custard filling in a Napoleon dessert, the flakiness of the pastry layers, and the sweetness of the glazed top, accented with dark chocolate.
It was an easy project, thanks to Pepperidge Farm Puff Pastry dough, instant pudding mix, my home grown strawberries, and fresh whipped cream.
