Breakfast is the most important meal of the day, since it provides us with the “fuel” necessary to start our day. However many of us are too busy in the morning to fit this meal into our schedule, thus most people skip it altogether, or just grab something quick on the go, like a cup of coffee.

I try to have breakfast every morning, and on weekends I put extra effort to make it a little more special.

These Frosted Lemon Cookies are actually very good, and the lemon icing is a very refreshing change for your taste buds, after sampling a myriad of sweets during the Holiday Season. As this recipe is for drop cookies, it is a quick project and even the frosting is quite simple. The only thing that requires a little more patience is the drying time of the frosted cookies, but even that is accomplishable during the same time frame as the baking.

Pecan Butter Balls – Cookie Recipe

I love baking, but since so many of my “consumers” are trying to eat healthfully, or experiment with different diets now and then, I try to support them, and do not bake as much. I also need to learn from their good judgment and cut down on these indulgences.

However, when Holidays come around, and parties are to be attended to, and family and friends to join for some merry making, I get back to my baking.
