My first experience with enjoying burritos was several years back, while still living in upstate New York. I loved all the ingredients in it, but the size was overwhelming for me….I can’t eat 2 pounds of anything in one sitting….not to mention all that rice and beans in a burrito..:-)

Falafel was introduced to me by my son, since lately it’s been his favorite lunch served with garden salad.
I was convinced that I would like this food as well, so decided to research some recipes, and prepare a batch for my family.
Today I will share the final recipe, and assure you that if you like vegetarian food, you will LOVE these.

The Great Lent begins on Monday, as it always does for the Byzantine Rite Catholics.
The Great Lent for Roman Catholics does not start until Ash Wednesday, so they have two extra days to enjoy meat meals. They also celebrate a very traditional Fat Thursday, when they enjoy their delicious “Paczki”, doughnuts.
I personally like to prepare meatless meals on Wednesdays and Fridays for the duration of the Great Lent, as well as during the full Holy Week, which is the week just before Easter Sunday.
