Baking with ginger puts me in a Christmas festive mood as the sweet aroma of baked goods fills my kitchen, and extends throughout the rest of the house.

My grandson loves plain cookies, so these Crispy Ginger Cookies make him smile and feel special.

Mahi Mahi in Veggie Casserole – European Recipe

Mahi Mahi is already a mild tasting fish, but the veggie vinaigrette seasons it further, masking the fish taste.

This dish may be served hot as a meal, or at room temperature as an appetizer. For best results, serve it the next day, so all the flavors have time to absorb and marry.

If you like hosting parties and including cheese spreads in your menu, you will want to add the Pesto Sun-Dried Tomato Cheese Spread to your recipe collection.
My daughter shared this recipe with me, and it is always a big hit at our parties.
Any leftovers may easily be stored in an airtight container for several days and enjoyed as a snack or as a breakfast spread in a toasted bagel.

Saint Nicholas or Santa Claus???

Saint Nicholas, was the “gift giver” I was familiar with during my childhood. He had a white beard, was dressed in bishop’s garbs, carried a crozier, and arrived on a white horse. On December 6th, he was visiting well-behaved children, and placing candy and cookies under their pillows. If you were really good, then he would drop off more goodies on Christmas Eve. You also were expected to know your Catechism, in case he decided to quiz you, before leaving you a gift. We recited prayers and songs dedicated to St. Nicholas, instead of leaving him milk and cookies.

It is time again to give thanks for all our blessings and to spend time together with family and friends. However, this year will not be as festive as always, due to the various limitations due to the raging COVID-19 virus.
