My spinach is thriving this year, so my first harvest produced enough tender fresh leaves to make two spinach omelettes for breakfast, and a salad for dinner.

Everyone loves snacking, and there is nothing wrong with that. Actually, it is recommended to have 2-3 healthful snacks in addition to 3 regular meals per day.
The only issue with snacking is its contents, and portion size.
My overwhelming May schedule prevented me from finding time to keep up with my blog, but I should be back on track now…:-)

This Light Chocolate Cake is very moist, and rich tasting, but the richness of the frosting is not so light.
The Cream Cheese and Peanut Butter frosting was a perfect combination of flavors and texture.
Spring is here….my favorite time of the year to admire the beauty of nature.
So much color everywhere, and absolute perfection in every plant and flower.
