The Raspberry Torte has been my daughter’s favorite Ukrainian torte for many years now, so I try to make it for her special occasions.
This torte requires some delicate handling of the baked cake layers, since each layer is baked separately, and somewhat challenging to remove from the cake pan, similar to the Irene Torte.
This recipe is from the Traditional Ukrainian Cookery cookbook by Savella Stechishin (pg.415) if you have her book. This book was extremely popular in the 1970s, and now you still can find it on Amazon.com.
I love making these Rosettes for special occasions because they look so dainty, but it is a time-consuming process like with most baking projects.
One of my favorite recipes from my mom, is a recipe for crepes. She usually filled them with creamed, and sweetened, farmer’s cheese. I like my crepes filled with fresh fruits, or fruit preserves ( I use Smucker’s Sugar Free Fruit Preserves), served with fruit syrup (also by Smucker’s), and whipped cream. This dish may be served as a light main course, or as a dessert. Makes about 8 crepes.
This recipe is very special to me, because every time I make these Nut Horns, I think of the two ladies who shared it with me.
During the summer months when fresh fruits and berries are in abundance I like to cook a fruity drink called Kompot.
At Christmas time I prepare a similar drink called Uzvar, which contains mostly dried fruits and berries, plus a few fresh apples.
Kompot and Uzvar may be sweetened with honey, however, I like to use a packet of Strawberry Jello powder for flavor, sweetness, and color.
