With the upcoming holidays like St. Nicholas Day, Hanukkah, Christmas, and New Year, there will be lots of parties to attend and lots of party foods to prepare and sample. I will contribute, by posting some of my favorite recipes for these occasions.
I have just picked some fresh cucumbers from my garden…..they are so fresh, and so much tastier than the ones from the store (no wax on these ones….). Garden fresh cucumbers actually do have a very nice taste, and can be eaten with the peel on, but I prefer them peeled.
Cucumbers may be used in a variety of ways: in tossed salads, as cucumber tea sandwiches, sliced and served plain or with a dip, used in numerous appetizers, etc. I love my cucumbers in a cucumber salad, dressed with sour cream or vinaigrette style.
There are many different recipes for potato salad, but one of my favorite ones is the Suburban Potato Salad. I love the added color and texture created by the fruit and vegetables. It makes a very nice addition to other party foods, as well as a side dish for lunch, dinner, picnic, or barbecue. This recipe makes about 6 cups of salad.
This is a very simple, light, refreshing, and colorful party salad.
I received many compliments from my guests, especially the ladies, at our Super Bowl Party last year. This vinaigrette also makes a great dish for office parties, barbecues, baby showers, and it is admired by my vegetarian friends.
