My spinach is thriving this year, so my first harvest produced enough tender fresh leaves to make two spinach omelettes for breakfast, and a salad for dinner.
My overwhelming May schedule prevented me from finding time to keep up with my blog, but I should be back on track now…:-)

This time I am sharing a recipe for Spinach Turkey Meatballs, which I enjoyed over garden salad.
These meatballs may also be served hot, over your favorite pasta or rice, with Mushroom Gravy or Fresh Dill Sauce.
This time I tried a recipe for Pork Loin stuffed with a mixture of sauteed spinach with garlic, sun-dried tomatoes, goat cheese, cream cheese, and sour cream, with some modification.
Most holidays, no matter if they are religious or secular, include large gatherings of family and friends, and lots of food to share with everyone.
