Crustless Spinach Quiche – Recipe
Quiche sounds like something complicated to prepare, but on the contrary, I would categorize this dish preparation as Cooking 101.
Also, it is such a versatile dish as it may be served for breakfast, lunch, or dinner, or brought to a party.
This is what it looks like all assembled and ready to bake.
This recipe yields 6-8 servings.
Ingredients
- 1 cup chopped onion
- 2 cups sliced fresh mushrooms
- 2 cloves of garlic, minced
- 2 tablespoons olive oil
- 1 package (10 ounces) frozen chopped spinach, thawed and well drained
- 1 cup deli cooked ham, sliced thick and cubed
- 5 large eggs, beaten
- 1/8 teaspoon pepper
- 3 cups shredded Monterey Jack cheese
Instructions
- Heat oil in a large skillet, saute onion for a couple of minutes until translucent.
- Add sliced mushrooms and cook for 2 more minutes or until tender.
- Add garlic and cook for 1/2 minute.
- Mix in spinach and ham.
- Cook and stir until the excess moisture is evaporated.
- Cool slightly.
- In a large bowl beat the eggs with the pepper, then mix in the cheese.
- Stir the spinach and ham mixture into the eggs and cheese mixture.
- Grease a 9-inch pie plate or a quiche dish and evenly spread the prepared filling, smoothing the top with the back of a spoon.
- Bake at 350° for 40-45 minutes or until a toothpick inserted in center comes out clean.
