Crustless Spinach Quiche – Recipe

Quiche sounds like something complicated to prepare, but on the contrary, I would categorize this dish preparation as Cooking 101.

Also, it is such a versatile dish as it may be served for breakfast, lunch, or dinner, or brought to a party.

This is what it looks like all assembled and ready to bake.

This recipe yields 6-8 servings.

Crustless Spinach Quiche  – Recipe

Ingredients

  • 1 cup chopped onion
  • 2 cups sliced fresh mushrooms
  • 2 cloves of garlic, minced
  • 2 tablespoons olive oil
  • 1 package (10 ounces) frozen chopped spinach, thawed and well drained
  • 1 cup deli cooked ham, sliced thick and cubed
  • 5 large eggs, beaten
  • 1/8 teaspoon pepper
  • 3 cups shredded Monterey Jack cheese

Instructions

  1. Heat oil in a large skillet, saute onion for a couple of minutes until translucent.
  2. Add sliced mushrooms and cook for 2 more minutes or until tender.
  3. Add garlic and cook for 1/2 minute.
  4. Mix in spinach and ham.
  5. Cook and stir until the excess moisture is evaporated.
  6. Cool slightly.
  7. In a large bowl beat the eggs with the pepper, then mix in the cheese.
  8. Stir the spinach and ham mixture into the eggs and cheese mixture.
  9. Grease a 9-inch pie plate or a quiche dish and evenly spread the prepared filling, smoothing the top with the back of a spoon.
  10. Bake at 350° for 40-45 minutes or until a toothpick inserted in center comes out clean.
