The Pineapple Swirl Cake recipe has been on my list of favorite cakes to try for quite sometime, and now I am very honored to finally share it with you.
It was an award-winning “Recipe of the Week”, submitted several years ago by aunt Elisabeth, to Suburban News in Westfield, New Jersey.
My sister shared her favorite cookie recipe with me, and once I tried it with my granddaughter, it was so easy and fun to make I decided to share it with everyone.
What is so interesting about this recipe, is that you use hard-boiled egg yolks rather than raw eggs.

I have been making Banana Bread in the past, but this time I wanted to make it into muffin cakes, so they are not as large as muffins, and no icing on top as for cupcakes…:-) They turned out wonderfully!
