Cucumber salad

I have just picked some fresh cucumbers from my garden…..they are so fresh and tender you can eat them with the peel on, unlike the ones you purchase at your grocer (no wax coating on these babies….).  

Cucumbers may be used in various ways: in tossed salads, tea sandwiches, sliced and served plain or with a dip, in numerous appetizers,  etc.  I love my cucumbers dressed with sour cream or vinaigrette style.

Ukrainian Potato Salad (Olivie) – European Recipe

There are so many different versions of Potato Salad, but once you taste this one, it will be your favorite.
It is very similar to the Suburban Potato Salad, but it contains a few different ingredients, such as spicier mustard but no apple.  In Ukraine many cooks add cubed smoked sausage (Kovbasa) to this salad, making it even richer in taste and texture.

Chicken Cordon Bleu – Recipe

If you would like to put together a meal that is easy to prepare, but looks complicated, you will love this recipe for Chicken Cordon Bleu.

You can use plain chicken breast, but I prefer a more flavored taste, so I marinate it for an hour, or overnight, in an Italian Salad Dressing. For simplicity and ease, I also use Campbell’s Cream of Chicken or Cream of Mushroom soup, for the sauce.
