Whole Wheat Varenyky(Pierogi) – Recipe
Did you ever have a moment when you set your mind on preparing something specific for dinner, then realized that you were short on the quantity of the main ingredient?
The other day, I was set to make varenyky (Ukrainian word for Pierogi), and realized that I was one cup short of all-purpose flour and low on sour cream, so I added whole wheat flour and used oil to fill in the gap.
I used Whole Wheat flour in the past to make homemade pasta, and it was good, with a slight nutty taste.
I used the same recipe for varenyky (click on the link), with the following adjustments:
- Add 1 cup of Whole Wheat flour in addition to 3 cups of all-purpose flour.
- Use 1/4 cup of vegetable oil and 1 Tbs of sour cream, instead of 1/2 cup of sour cream.
- Add a little more liquid to obtain the same softness of the dough as with regular flour.
- The dough is a bit denser, so roll it out thinner.
The cooked varenyky were a little darker in color due to the whole wheat flour, but tasted great and perhaps healthier, smothered with lots of onions sauteed in butter and oil.
