I have been searching for recipes with couscous and chickpeas, hence the recipe I am sharing today. It is such a fun vegetarian dish for healthy eating, and a great addition to my recipes for the Fat Smash Diet, and meatless menu.

Whenever we decide to change our eating habits, we search for new recipes to expand our culinary horizons.
Today I prepared this very nutritious and high-protein Baby Lima Bean Vinaigrette salad, which fits perfectly in the Fat Smash Diet menu I am currently following.

This recipe is from the Fat Smash Diet book, suitable for Phase I of this program.
Its taste is on the tangy side, due to the required amount of lemon juice, but also quite refreshing.
Great as a snack between meals, or as a side dish with a Veggie Burger, Falafel, or brown rice.
