Apricot Cake is a must on my dessert table, especially when my sons are visiting for the holidays. Even though they like most of my baked goods, this one is their favorite, because it is not readily found in bakeries or restaurants. A friend of mine, who is not a big fan of apricots, gave this cake her vote.
All the rain showers we have been having lately washed off many of the early spring flowers, but new ones came up in their place.
Also my veggie garden is fully planted by now, so all this fine rain is great for my baby plants.

Today I will share a No Bake recipe for a Low Fat Jello Cheesecake, which is very simple to prepare, presents itself very nicely, and it tastes delicious.
Jello Cheesecake is much lighter than a traditional cheesecake, and to make it even lighter, you may use 1/3 less fat cream cheese, which I tested on one of the layers, and it held up as well as the regular cheese.
As you already read in my log, I am using a pressure cooker on regular basis, for cooking quick meals on a busy day. I will share a few of my favorite pressure cooker recipes. Here is one for Spareribs with Barbecue Sauce. My family likes this dish served with boiled, chunky potatoes, seasoned with sauteed onions, salt and pepper to taste.
It is a well known fact, that children do say the darnest things, and they always do it is such a sweet and honest way.
