Honey Cake Maria – Family Recipe

I am very lucky to be surrounded by many excellent bakers in my and my husband’s side of the family, who also love to share their recipes.

I have been baking honey cakes for a very long time now, and love them all, but this one is even lighter in texture and consists of other special ingredients, hence the recipe for Honey Cake Maria.

This recipe yields one 9 x 13-inch sheet cake.

Honey Cake Maria – Family Recipe

Ingredients

  • 6 eggs, room temperature,separated
  • 1 cup light brown sugar
  • 1 cup honey
  • 3/4 cup oil (I use Canola)
  • 1/2 cup strong coffee with cream, room temperature
  • 1 tsp. vanilla extract
  • 2 cups all-purpose flour (I use Gold Medal unbleached)
  • 1 cup walnuts, ground fine
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • 1 tsp. cinnamon, ground
  • 1/2 tsp. cloves,ground
  • 1/4 tsp. allspice, ground
  • pinch of salt

Instructions

  1. Separate the room temperature eggs by placing the yolks into a large bowl, and the egg whites into a medium size bowl.
  2. Whisk the egg whites until stiff peaks form. Set aside.
  3. Add brown sugar to the egg yolks, and beat on high speed until creamy and light yellow color.
  4. Mix in honey, coffee, vanilla and oil, until fully incorporated.
  5. Sift 1 cup of flour into the wet ingredients. Add the baking powder, baking soda, cinnamon, cloves, allspice and salt, and mix until incorporated.
  6. Sift another cup of flour, add the ground walnuts and mix to incorporate.
  7. Using a spatula gently fold in the whipped egg whites, until all combined. Set aside.
  8. Preheat the oven to 325 degrees F.
  9. Line a 9 x 13 inches baking sheet with parchment paper, covering the bottom and sides.
  10. Grease generously then pour the batter into the pan, smoothing out the top for even spreading.
  11. Bake for 1 hour, or until a toothpick comes out clean.
  12. Remove from the oven, and leave in the pan for 10 minutes, then remove unto a cooling rack to cool completely.
  13. May sprinkle the top with powdered sugar before serving.
