This hot summer weather calls for lots of quick-to-prepare, light meals, including many salads and refreshing desserts.
Jell-O desserts are one of my favorite summer desserts because they are light and served cold.

My sister-in-law shared this Jello Gem Cream Roll recipe, but I slightly changed the filling instructions. She used one flavor of jello which was not fully set yet, to sweeten and add color to her whipped cream filling. I chose to use 3 different jello flavors, let each fully set, then cut them into small “gems” and gently fold them into the whipped cream to create the mosaic effect.

This is one of my family’s favorite jello desserts, because it can be made from regular jello, or sugar free jello, without jeopardizing its texture, or taste.

The abundance of fresh strawberries from my garden, and succulent rhubarb stalks from my daughter’s garden, prompted me to cook up a delicious fruity compote, and create a batch of refreshing popsicles, for my grandchildren to enjoy during this hot weather.
