Coleslaw with Apple – Recipe
Coleslaw is one of my favorite salads from the past which I still love to prepare and serve.
Today I am sharing my current recipe which includes a Granny Smith apple as one of the ingredients.
This recipe yields 6-8 servings.
Ingredients
- 4 cups green cabbage, shredded fine
- ½ cup shredded carrots (large eye shredder)
- 2 Tbs. Onions, chopped
- 1 Tbs scallions, chopped
- 1 Granny Smith apple, peeled, cored and shredded on a large eye shredder
- 1.5 tsp salt
- ½ tsp black pepper
- ½ tsp paprika
- 1 Tbs. Fresh dill, chopped
- 1 clove garlic, minced
- 2 Tbs. Mayonnaise
- 2 Tbs sour cream
- 2 Tbs apple cider vinegar
Instructions
- In a large bowl place the shredded cabbage, carrots, onions, scallions, apple and mix gently to incorporate.
- Mix in salt, pepper, paprika and dill.
- In a small bowl mix the mayonnaise, sour cream, garlic and apple cider vinegar until smooth and uniform dressing is formed.
- Pour over veggies and fold in gently to coat evenly.
- May serve immediately, or keep covered in the fridge for later use.
